National Sponge Cake Day - August 23rd

Yep, it is the day to make a sponge cake and/or eat a sponge cake. So what exactly makes a sponge cake different than a regular cake? Well, according to Jon, it is a cake made of sponges. Actually I found out that it is a foam-type cake like angel food and chiffon cakes. They all depend on beaten egg whites for lightness, each differing slightly.  I usually think of jelly rolls when I think of sponge cake. So today we decided to make an ice cream roll cake. Much more tasty than Jon's version!
